Roasted Soybean Powder in Korean Cooking:

In English, we can translate ‘bokkeun konggaru’ (볶은 콩가루) as ‘roasted soybean powder.’ This subtly nutty and earthy Korean ingredient is used in traditional desserts and snacks. 

While used commonly in South Korea, it may be an acquired taste for those accustomed to the flavor. 

Below, I list some examples of dishes that use roasted soybean powder as an ingredient.

Example of Bokkeun Konggaru in Korean Cuisine: 

  • Injeolmi (인절미): is a variety of Korean rice cake. You make this dish by steaming and pounding glutinous rice flour until it is soft and chewy. Then, roll the steamed rice ball flat before cutting it into small pieces (usually bite-sized squares). Finally, toss the rice cake pieces in roasted soybean powder! You can try making my recipe!!
  • Injeolmi Bingsu (인절미 빙수): Bingsu is a milk-based shaved ice dish finished with a variety of different sweet toppings. Injeolmi is one such topping!

What Is a Roasted Soybean Powder Substitute?

Unfortunately, there is not a good substitute for roasted soybean powder. Instead, you can use other ingredients to coat your rice cakes, but it will make a completely different type of dessert.  

Is Roasted Soybean Powder Gluten-Free?

Roasted soybean powder is naturally gluten-free! That being said, as always, check the packaging to ensure it is not processed with any gluten-containing ingredients!

What About Other Major Allergens?

Besides gluten, this ingredient does not contain any wheat, dairy, peanuts, tree nuts, shellfish, sesame, eggs, and milk. Therefore, it does not contain 8 of the 9 major allergens. 

Bokkeun konggaru contains soy as it is made from soybeans. For those with a soy allergy, you should avoid this ingredient.   

How Should I Store Bokkeun Konggaru?

I recommend storing unopened bags of bokkeun konggaru in a cool, dark, and dry location (such as the pantry). Once opened, store it in the refrigerator.

I always recommend shopping for Korean ingredients at your local Korean family-run grocery stores or large Asian grocery chains. 

If you have neither in your area, you can also buy this ingredient online! For example, you can shop on Amazon, the H-Mart online store, or other online Asian markets.
